The Rare Dairy are thrilled to be offering these workshops with David Asher, author of The Art of Natural Cheesemaking and Milk into Cheese and offering an introductory class and a second level advanced class.

> Introductory class: We had a full house last year for the introductory course – an amazing experience! This 5 day course will focus on natural methods and full circle, small-scale cheesemaking: no freeze-dried cultures or synthetic enzymes will be used in any of our makes

> Second level, advanced class: This 5 day, advanced course explores how natural methods help evolve the best characteristics in all styles of cheese and will focus on more challenging cheeses
